Druerne sorteres og afstilkes, inden den kernesunde frugt nænsomt dirigeres til gæringstanken – helt uden brug af pumper.</span></p> <p style="margin-top: 0cm; background: white; box-sizing: border-box; margin-bottom: 1rem; font-variant-ligatures: normal; font-variant-caps: normal; orphans: 2; text-align: start; widows: 2; -webkit-text-stroke-width: 0px; text-decoration-thickness: initial; text-decoration-style: initial; text-decoration-color: initial; word-spacing: 0px;"><span style="font-size: 10.5pt; font-family: 'Arial',sans-serif; color: #212529;">Før gæringen koldmacererer druerne i 4-5 dage, hvorved mosten beriges med ekstra farve og frugtaromaer uden udtræk af bitre fenoler fra drueskindet. Herefter følger gæringen på ståltank med frugtbevarende temperaturstyring, mens 18-20 dages maceration med daglige ”punch downs” trækker farve, smag og tanniner fra drueskindet. Vinen fuldendes med 10 måneders afrunding på ståltank med fuldbyrdet malolaktisk gæring.</span></p>
