Chateau Cantin er en af flagskibsejendommene hos den store franske vingruppe, Grands Chais de France, der råder over mere end 670 hektar vinmarker fordelt på 21 slotte. Château Cantin ligger på et perfekt beliggende ler- og kalkstensplateau i St. Emilion, hvor især Merlot-druen indtager den altoverskyggende hovedrolle.

Deres Grand Cru-vin er nemlig lavet på 100 % Merlot og til at behandle druerne står ingen ringere end Michel Rolland i kælderen som ønologisk konsulent. Man finder næppe nogen mere kompetent winemaker i verden, når det kommer til Merlot.

93-94/100 Vert de Vin "A fragrant and delicate nose, which first expresses floral notes of fresh rose, violet and cherry blossom, associated with a fresh and gourmet fruity bouquet. It reveals notes of wild strawberry, raspberry, elderberry, red cherry and morello cherry, complemented by a subtle spicy (vanilla, nutmeg) and roasted (roasted hazelnut in the background) touch, as well as a hint of peppermint and bitter cocoa. On the palate, the wine expresses a round, greedy and ample attack and a firm mid-palate, carried by a fairly powerful and dry tannic structure, but with a fine texture. The flavors are ripe, with a hint of sweetness. We find notes of morello cherry, blackberry, black plum, blackcurrant, crème de cassis, redcurrant jam and crushed strawberry, accompanied by touches of vanilla, cinnamon, mint chocolate and rose. . Density and richness on the palate are balanced by a good level of acidity. Nice persistence and concentration."

Rich nose with ripe blackberries, mulberries and elderberries, distinct spiciness, fine toasting, dark chocolate and hints of coffee. On the palate rich with freshness, quite elegant character with ripe tannins and juicy fruit, discreet spiciness in the finish. Very good length."

Smooth and juicy, this is really lively, much more acidity on the palate than you think you'll get from the nose. Still a bit tight and tense with the bold, firm tannins making the impact and coating the mouth. Soft touches of wood spice, liquorice and clove give the edges while the fruit is persistent from start to finish with mouthwatering acidity and salty touches too. Bold and oaky but good promise. 3.5pH. HVE3 certified. Ageing 12 months in French oak, 50% new, 50% one wine barrels. Julien Viaud consultant."
